Taco Soup
Oct 04, 2018It's Fall!!! Which means it's time for soups! There's nothing more comforting than soup cooking on the stovetop while a fall scented candle burns on rainy, autumn day. Even though it hasn't really rained much yet, we've already started in on our fall soup cooking!
This Taco Soup was a delicious way to kick things off :-)
Taco Soup
Ingredients
1 lb. Lean ground turkey
1/2 cup diced yellow onion
1 cup diced red bell pepper
1 clove minced garlic
2 cups sweet potatoes, diced
2 cups frozen corn
3 jars diced fire roasted tomatoes
1 package taco seasoning
4 cups chicken broth
Cooking oil spray
Sea salt and pepper to taste
Toppings
Non-fat greek yogurt
Avocado
Shredded cheese
Tortilla chips
Onions
Tomatoes
Directions
Coat a large saucepan with cooking oil, then heat to medium. Add in diced onions, red bell peppers, and garlic. Cook until slightly softened. Add in ground turkey and brown. Add in remaining ingredients then reduce heat and simmer for 30-45 minutes. Serve warm with desired toppings.
Macros for 8 servings - 173 calories, 22g carb, 18g protein, 2g fat
