Sunflower Butter Chocolate Chip Cookies
May 15, 2019What's your favorite type of cookie? Chocolate chip would have to be my favorite with peanut butter chocolate chip in close second. I mean, is there anything better than a warm chocolate chip cookie right out of the oven?
While I love me some peanut butter, I also enjoy sunflower seed butter which is similar in taste and texture to peanut butter. I LOVE using sunflower butter in this cookie recipe not just because it tastes amazing. Also because they often times come out green!
A chemical reaction that occurs when baking with sun butter and baking soda. I did notice that the longer these baked the less they likely they were to be green. However, they are best when taken out before they are too brown which makes them soft and chewy.
Sunflower Seed Butter Chocolate Chip Cookie
Ingredients
1 1/2 cup Blanched Almond Flour
1/2 tsp. baking soda
1/4 cup coconut sugar
1/2 tsp. sea salt
2 tbsp. honey
1/2 cup sunflower seed butter
1/4 cup Palm Shortening or Coconut Oil
1 egg
1 tsp. vanilla
1/4 cup Enjoy Life Chocolate Chips
Instructions
Preheat oven to 350 degrees and line a baking sheet with parchment paper. Combine almond flour, coconut sugar, baking soda and salt in a medium bowl. In a separate bowl mix together the honey, sunflower seed butter, shortening (or oil) egg and vanilla. Add the wet mixture to the dry ingredients and mix well. Stir in chocolate Chips then roll into small balls and flatten with your palm on the prepared baking sheet. Bake for 8-10 minutes or until lightly browned. I like to take the out right around 8 minutes before they get too brown because we like them soft and chewy. If you leave them in longer they will be crispy.Enjoy!
