Paleo Chocolate Chip Banana Muffins

Ingredients

  • 2 large ripe bananas

  • 4 eggs

  • 1/4 cup coconut sugar

  • 2 tbsp. coconut oil

  • 1/4 cup unsweetened applesauce

  • 1 tsp. vanilla

  • 1/4 cup natural almond butter

  • 1/2 cup blanched almond flour

  • 1/2 cup cashew meal

  • 1/4 cup shredded, unsweetened coconut

  • 1/2 tsp. baking soda

  • /12 tsp. sea salt

  • 1/4 cup mini chocolate chips ( I use Enjoy Life)

Instructions

  1. Preheat oven to 350 degrees and grease a muffin tin sheet with coconut oil.

  2. In a large bowl, mash bananas.

  3. Add in the eggs, coconut sugar, coconut oil, vanilla, almond butter and applesauce and mix until well combined.

  4. In a separate bowl, mix the almond flour, cashew meal, shredded coconut, baking soda and sea salt.

  5. Add the dry ingredients to the wet and stir until well combined.

  6. Mix in the mini chocolate chips then scoop into prepared muffin tins.

  7. Bake for 20-25 minutes or until golden brown and a knife comes out clean.
