Nutty Protein Bars

1 cup raw almonds

1 cup raw pecans

1/3 cup raw or sprouted pumpkin seeds

1/3 cup raw sunflower seeds

1/2 cup vanilla protein powder
-
1/2 tsp. sea salt
-
1 tsp. cinnamon
-
6-7 pitted dates

1/3 cup raw organic honey
-
1/2 cup almond butter
-
2 tbsp. coconut oil
-
1 tsp. vanilla
-
1/3 cup mini dark chocolate chips
Instructions

Preheat oven to 350 degrees.

In a food processor, pulse nuts and dates until chopped well.

Add in protein powder, cinnamon, and salt, pulse until mixed in.

In a saucepan, melt coconut oil, almond butter, and honey.

Remove from heat and add in vanilla.

Stir to combine then pour into the nut mixture and pulse until a wet sticky mixture forms. You may have to stop to scrape down sides a few times.

Press into an 2 quart baking dish then bake for 15-18 minutes or until lightly brown.

Allow to cool then cut and wrap individually.
